Sugar coated crunchy snack




The procedure to make the main biscuit is same as the salted ones....however you need to prepare the dough without salt.

Make a sugar syrup with 1 cup sugar and 1 tsp water. When the syrup becomes real thick and is full of bubbles, add these biscuits and mix well. Seperate them on a plate and allow it to cool.

Yet another version is adding sugar to the dough itself and is popular as shankarpale... will post that later.

Coconut Ladoo



Ingredients:


1 cup grated coconut (can use dry coconut pd also)
1/2 cup milk powder
1/2 cup sugar
1/2 tsp cardamom powder
2 tsp ghee.


Method:



Heat the sugar with little water till it starts boiling. Add the coconut, milk powder and mix well till it becomes one big lump.

Cool for 10 minutes and make balls of it. If required, dust a bit with milk powder to get the shapes.

P.S. If using dry coconut powder, slightly dry roasting it will give it a nice flavour.

Chocolate Kesari





Ingredients:



1 cup roasted rava
1 1/2 cups-2 cups sugar depending on taste requirements
3 cups water
2 tsp cocoa powder
Few roasted cashews
Few raisins
4 tbsp ghee
1/ tsp cardamom powder.


Method:



Heat water and add the rava to it. Cook for two minutes and add the sugar, ghee and cocoa powder to it. Cook till it gets a bit thick.

Add cardamom powder and roasted cashews and mix well.

Carrot Halwa





Ingredients:



2 cups grated carrot
1/2 cup sugar (add more if required)
Roasted nuts
1/4 cup khova
2 tbsp ghee
1/4 cup milk


Method:



Heat ghee and add grated carrot. Mix well and cook for 10 minutes. Add milk and continue cooking till soft and dry. Add sugar and mix well till it dissolves and water is absorbed. Switch off the gas and add the khova. Mix and garnish with nuts.

Biscuit pudding cake





Ingredients


A pack of crisp biscuits (I used one with nuts)
2 cups milk
3 tbsp custard powder
4 tbsp sugar
Chocolate strands for garnishing.


Method:


Heat the milk keeping aside a 1/4 cup. Mix the custard powder with the 1/4 cup milk. Add sugar to the hot milk and when it dissolves, add the custard powder mixed with milk. Continue to heat until the custard starts getting thick..Keep stirring and cool well.

Place a layer biscuits on a tray close to each other. Use the broken pieces to fill in the gaps. Pour one portion of custard mix over it. Next place another layer of biscuits and pour in the rest of the custard over it and spread well. Garnish with chocolate strands.

Allow it to get set well by refrigerating for some time. Cut into pieces and serve.

Milk cake




Ingredients

1 ltr full cream milk
1/2 cup milk powder
1 small cup sugar
Cardamom powder


Method:

Heat the milk on low flame and stir continuously till it gets thick..It would take about 1 hour 15 mins for 1 ltr milk. Add sugar, milk powder and cardamom powder. Mix well and stir till it gets thick.

Pour into greased plate and cool. Cut into desired shape pieces. Garnish with chopped nuts.

Homemade Rasgullas





Ingredients

1 ltr milk
2 tsp lemon juice
2 tsp all purpose flour
3/4 cup sugar
2 cups water



Method:

Boil the milk and stir in the lemon juice. Keep stirring for 5 minutes till the water starts getting clear and paneer accumulates. Switch off the stove and drain the water on a muslin cloth. Squeeze out the water from the paneer completely. Now keep rubbing the paneer till it gets soft without crumbling. Add in the flour and mix well. Make small balls and keep ready. Heat the sugar and water till it boils and add in the balls kept aside. Transfer to a vessel and pressure cook for one whistle.

Cool and serve spongy and tasty homemade rasagullas.

Rava Paniyaram




Ingredients:

Maida - 1 cup
Rawa -1cup
Sugar -1cup
Milk -1 cup
Ghee or oil - for frying
Cardamom Powder -as per taste
Cooking soda- 1/4 




Yield : 24 paniyarams

Caloric value: 1 paniyaram = 86 calories

Method:


1. Mix maida and rawa with sugar and milk at room temperature.
2. Keep aside for one hour.
3. If necessary add little more milk.
4. Mix cardamom powder and soda powder just before pouring.
5. Heat paniyaram pan with 1/2 tea spoon of ghee in each pit.
6. Pour the batter in each cup till half  filled.
7. Cook in medium flame, turn over carefully with a spoon by loosening the sides.
8. Add another spoon of ghee or oil on top.
9.When it is cooked properly remove with the help of a spoon. serve hot or cold.
