Kerala Duck Curry





Ingredients:

Duck - 1 kg
Tomato - 1
Onion - 3
Chilly powder - 2 tbsp
Coriander powder - 2 tbsp
Ginger - 1 piece 
Green chilly - 5
Garlic - 3 cloves
Turmeric powder - ½ tsp
Garam masala - 1 tbsp
Coconut oil - 1 desertspoon
Mustard - ½ tsp
Curry leaves - 2 stem
Salt - As required
Coriander leaves for garnishing


Method:



Clean Duck and cut into pieces.
Slice Onion, Ginger, Green chilly and Garlic.
Make a paste of Chilly powder, Coriander powder and Tomato. 
Heat oil in a kadai, splutter mustard and the sliced items, sauté well.
Add Curry leaves, tomato paste and stir.
Add duck pieces, salt and water.
When the Duck starts cooking add Garam masala.
Keep in low flame till the Gravy becomes thick.
 
Garnish with Coriander leaves.

Chicken Roll




Ingredients:


Chicken/ Turkey breast - 1
Spinach - 1/2 cup
Green chillie - 1
Chilly powder - 1/2 tsp
Corriander powder - 1/2 tsp
Cumin powder - 1/4 tsp
Garam masala - a pinch
Turmeric powder - a pinch
Ginger garlic paste - 1 tsp
Cumin powder - 1/4 tsp
Salt - to taste
Lemon juice - 2tsp
Yogurt - 2 tblsp


Method:


1. Wash the chicken/turkey breast and sclice it into thin layers about 1 inch thick.
2. Mix all the spices (garam masala, chilly powder, ginger garlic paste, corriander
powder, cumin powder, turmeric powder and salt) with yogurt and add the lemon juice to it.
3. Apply the marinade on the chicken/turkey layers and let it rest in the refrigerator for atleast half and hour. Overnight marination would be excellent.
4. While the chicken/turkey rests, heat some oil in a pan. Temper some cumin seeds.
5. Add the green chillies and spinach with little salt. Let it cook for few minutes until the spinach wilts.Switch off and let it cool.
6. Once it is cool enough, grind it into a coarse paste.
7. Spread this spinach chutney on the chicken/turkey layers.
8. Roll the chicken/turkey as shown in the picture. Use toothpicks to hold the chicken in place.
9. Fry the rolls in oil or bake it in an oven preheated to 300 degrees for 20 minutes or until done.
10. Remove the toothpicks and serve. Few drops of lemon juice can be added at the end

Butter Chicken





Ingredients: 



chicken - 1 kg
butter - 250 gms
ginger paste - 1/2 tbspn
garlic paste - 1/2 tbspn
onion - 1/2 kg
tomato - 1/2 kg 
cashew - 10 gms
chilly pdr - 3 tsp
dhaniya pdr - 2 tsp
turmeric pdr - 3/4 tsp
garam masala pdr - 3/4 tsp
spices - 2 each (cinnomon, clove, cardamom)
jeera - 1/2 tsp
methi - 1/4 tsp
cream - 1/4 cup
oil - 1/2 cup
salt to taste.






Method:



  1. Dry roast jeera and methi, powder it.
  2. Cook chicken, adding ginger, garlic paste and turmeric pdr.
  3. Melt butter saute, onion and cashew till soft.
  4. Allow it to cool and grind to a smooth paste.
  5. In the remaining butter, add spices saute and in low heat, add all powders except the dry roasted.
  6. Then add the ground onion paste and tomato puree.
  7. After 5 mins, add the chicken.
  8. When the gravy thickens, put the dry roasted powder.
  9. Cook again for few secs, garnih with a tbspn of cream.
  10. serve hot with indian breads (roti, nan, kulcha, paratha).

Black Chikpeas Gravy, Kala Channa Curry (kadala curry)






Ingredients:

Black Chikpeas (Kala Channa) - 1 cup
Onion - 1/2 (chopped)
Green Chillies - 2
Corriander Powder - 1.5 tsp
Red Chilly Powder - 1 tsp
Turmeric Powder - 1/8 tsp

To Fry and grind

Pearl Onions - 4
Garlic - 3-4 cloves
Ginger - 1" piece
Fennel Seeds - 1/2 tsp
Whole Garam Masala - 2" cinnamon stick, 3 cloves,  2 cardamoms
Coconut - 1/2 cup (You can add more depending on the gravy you want)Tomato - 1 big

For Seasoning

Oil (preferably coconut oil) - 1 or 2 tblsp
Mustard Seeds - 1/4 tsp
Curry Leaves - 1 spring
Dry Red Chillies - 2


Method:


1. Soak the black chikpeas overnight and pressure cook with salt, chopped onions and green chillies. It usually takes about 4 whistles.
2. In the meantime, dry roast all the ingredients under 'To Fry and Grind' except 
tomato.
3. Roast on a medium low flame till the coconut turns brown in colour. Be careful to 
do on low flame and not burn it.
4. Cool the mixture and make a smooth paste along with the tomato and required water.
5. Heat oil in a kadai or pan. Splutter the mustard seeds and curry leaves.
6. Add the dry red chillies and the ground masala. Fry for about 2-3 minutes.
7. Add the spice powders - red chilly powder, corriander powder and turmeric powder.
8. Add the cooked chikpeas. Bring everything to a boil, reduce the flame and let it 
simmer till the gravy thickens.
9. Check for salt and switch off. Garnish with some fresh curry leaves

Cauliflower biriyani







Ingredients:


1 cup basmati rice
2 onions sliced lengthwise
1 small cauliflower-cut into florets
2 tsp oil
1 tsp cumin seeds
1 green chilli slit into half
Bit of asfoetida
Few cashew nuts
Few curry leaves
1/2 tsp turmeric powder
1 tsp garam masala powder
Salt to taste
1/2 cup beaten curds
Finely cut coriander leaves


Method:


Soak the rice for 1/2 hour in sufficient water. Heat oil and add cumin seeds. When it splutters, add green chillies, cashews and roast till it starts turning golden brown. Add asafoetida, curry leaves, onions and fry for 2 mins. Add the cleaned cauliflower florets, rice (after draining the water) and cook for 2 mins. Finally add 2 cups of hot water, salt, turmeric, curds, garam masala powder and mix well.

Transfer to a vessel and pressure cook. Garnish with fried onions, cashews and coriander leaves.

Serve hot with raita

Sweet corn pulav




Ingredients:


1 cup basmati rice
1 cup sweet corn
2 tsp oil
1/2 tsp cumin seeds
2 cloves
Piece of cinnamon
1 bay leaf
1 onion cut lengthwise
1 onion and few cashews - grind to paste
Salt to taste
1/2 tsp turmeric powder
1/2 tsp ginger paste
2 tsp garam masala powder



Method:

Soak rice for 1/2 hour. Heat oil, add cumin seeds. When it splutters, add cloves, cinnamon and bayleaf. Add onions chopped lengthwise and fry till it starts changing colour. Add ginger paste, turmeric powder, garam masala powder and the onion cashew paste. Fry for 2-3 mins to get rid of the raw smell. Add soaked rice, salt and mix well. Transfer to a vessel, add 1 1/2 cups of water, sweet corn and pressure cook it.

Garnishing options- fried onions, cashews, coriander leaves.

Rajma pulav





Ingredients:


1 cup kidney beans soaked overnight and half cooked
1 cup basmati rice soaked for 1/2 hr
2 tsp oil
1 tsp cumin seeds
2 cloves
Small piece of cinnamon
1 Bayleaf
2 tbsp tomato puree
1 tsp garam masala powder
1/4 tsp turmeric powder
1 tsp red chilli powder
Salt to taste
Finely chopped coriander leaves
Roasted cashews and raisins



Method:



Heat oil, add cumin seeds, cloves, cinnamon and bayleaf. Fry for a minute and add tomato puree, garam masala powder, turmeric powder, red chilli powder and salt. Mix well and fry for 2 mins. Drain the water from the soaked rice and add the rice to the fried masala. Mix till dry and add 2 cups of water. Add the half cooked beans and transfer to a vessel. Pressure cook for 2 whistles.

Use a fork to seperate the grains. Garnish with finely chopped coriander leaves.

Serve with raita of your choice.

7 Grain flour thalipeeth



Ingredients

1 cup 7 grain flour
Salt to taste
1 medium potato boiled and mashed
1 small onion chopped finely
Finely cut coriander leaves
1/4 tsp ginger paste
Finely cut green chillies or green chilli paste as reqd
1 tsp garam masala powder
Oil as required.



Method

Make a soft dough of the ingredients except oil with little water. Grease a plastic sheet with oil and pat medium sized balls of the dough on the sheet. Transfer it to a hot tava and cook with few drops of oil till golden brown spots appear on both sides.

Serve hot with sweet curds or any mildly spiced side dish.

MASALA CHAPPATHI



Ingredients:

Wheat flour - 2 cups
fresh thick curd -1/2 cup
Milk - 1/2 cup
Roasted cumin - 3/4 tsp
(powder coarsely)
Powder salt - 1 tsp
Red chilli powder  - 1 tsp
Dry mango powder - 1/2 tsp
Garam masala powder - 1/4 tsp
Oil - 5 tsp (for the dough )
more oil for frying



Method:

Mix  all the dry ingredients in a mixing bowl.
Pour curd,milk and knead to a smooth dough.
keep closed for 3 to 4 hours.
Make chappathis as mentioned previously.
Fry on a hot tawa using oil for both sides while frying.


Yield: 12 chappathis.

Caloric value:

1 chappathi - 93 calories.

ALOO PARATHAS



Ingredients for Stuffing:

Potatoes - 1/2 kg
powdered salt - 1 tsp
Aniseed - 1/4 tsp
Green chillies -8
Ginger garlic paste - 1/2 tsp
Garam masala powder - 1/4 tsp
Onion - 2
Finely cut coriander leaves- 2 Tbl. sps
Oil -enough for frying.


Method:

For  the dough:

Prepare  dough as plain chappathi Use ghee or oil while mixing the dough.


For the stuffing:

Cook potatoes. peel and mash.

Heat little oil and season with aniseed and then fry ginger garlic paste.

Add mashed potatoes with salt, turmeric powder and garam masala powder.

Fry for few minutes and remove from fire.

Mix minced green chillies and finely cut onions, coriander leaves to the
potato mixture when it cools down.

Method for preparing Chappathis:

Make medium sized balls from the dough.

Flatten ball and keep a tablespoon of fillinf inside.

close and seal well all around .

press and dredge in wheat flour and roll out into thick parathas.

Heat a tawa and fry these parathas using oil for both sides while frying.

Serve it hot.
